If you don't have the patience to make a Tom Collins try it's much drier sibling. The classic Japanese jinrickusha (or rickshaw as we know it today) is about as easy as it gets to make at home. Little gin, little lime, a little fizz. One of my favorites for a hot day or for cooking in the kitchen. Different gins can really shine with this simple highball.
What is your favorite gin to use in a Rickey?
In a Collins Glass:
Add one ice chunk.
Cut a lime in half and squeeze one half of it into the glass.
Drop in the spent half.
Pour in 45 ml of frozen gin.
Ice up the glass
Top slowly with cold carbonated water
